Salsa verde is made from tomatillos. It makes an excellent salsa or base for chili. Try using this recipe in combination with the Quinoa White Chicken Chili.
Ingredients
1-2 pounds tomatillos
2 jalapeño peppers (sliced in half and seeded)
1 small onion (sliced into wedges)
4 cloves garlic
1 lime (juice and zest)
1/2 cup cilantro
salt and pepper to taste
Instructions
Place the tomatillos, jalapeños and onion in a single layer on a baking sheet or dish.
Cook in oven at 400° until tender. About 15-20 minutes.
When they are cool enough, remove the out husks from the tomatillos.
Put tomatillos, jalapeños, onion, garlic, lime juice and cilantro into a food processor or blender and puree.
