Mediterranean Quinoa Salad

I love to make filling salads for both lunch and dinner and although I've seen this dish done many ways, this recipe from POPSUGAR is by far one of my favorites with a few modifications of my own. This Mediterranean quinoa salad became one of my go-to meals when I was living in Sydney but with that being said, it also makes a great summer dish that you can enjoy on the beach or by the pool. This vegetarian dish is colorful, fiber-rich, and can be made in just five minutes! The best part is that this dish will only get better with time if you let the dressing mix well with the salad.
Cooking Instruction
- 1. Whisk together the dressing ingredients in a small bowl to set aside
- 2. In a large bowl, combine the quinoa, spinach, and half of the dressing prepared earlier, mix well
- 3. Add the red, yellow, and organge peppers, tomatoes, onion, and add the rest of the dressing to bowl, mix well
- 4. Add in the feta, and either refrigerate or enjoy immediately
Ingredients
For the dressing
- 3 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- ½ tablespoon olive oil
- Pinch of oregano
For the salad
- 1 cup red/white quinoa, rinsed
- 2 cups spinach
- ½ red onion, diced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 1 organge peper, diced
- 12 grape heirloom tomatoes, halved
- ¼ cup feta cheese
