Salsa verde is made from tomatillos. It makes an excellent salsa or base for chili. Try using this recipe in combination with the Quinoa White Chicken Chili.
Ingredients
- 1-2 pounds tomatillos
- 2 jalapeño peppers (sliced in half and seeded)
- 1 small onion (sliced into wedges)
- 4 cloves garlic
- 1 lime (juice and zest)
- 1/2 cup cilantro
- salt and pepper to taste
Instructions
- Place the tomatillos, jalapeños and onion in a single layer on a baking sheet or dish.
- Cook in oven at 400° until tender. About 15-20 minutes.
- When they are cool enough, about 5-10min, remove the out husks from the tomatillos.
- Put tomatillos, jalapeños, onion, garlic, lime juice and cilantro into a food processor or blender and puree.
- Add salt and pepper to taste.
