Recently I have been trying to follow the Paleo and SCD diets as much as possible. Both of them eliminate grains, dairy, and refined sugars. Although eating this healthy is rewarding, there are downfalls; like not being able to eat grains, dairy and sugar. Thankfully there are many recipes out there that provide alternative ways to cook and bake the things you normally would. These blueberry muffins are a great example, they're fresh, delicious, and just as easy to make as normal muffins.
They are Grain Free, Gluten Free, and Low Carb.
Recipe makes 6 muffins. Store in an airtight container in the refrigerator.
