Pasta Primavera

- 3 carrots, sliced
- 1/3 cup white wine
- 1 tsp basil
- 1 tsp parsley
- 1 tsp oregano
- 3/4 cup Parmesan cheese (Substitute: Veggie Cheese)
Ingredients
- 1 box garden spirals pasta
- 1/4 cup olive oil
- 1 medium onion chopped
- 1 small pack of mushrooms
- 2 cloves garlic or garlic powder
- broccoli chopped, 2 small heads
- 1 zucchini, sliced and quartered
This is a very simple recipe that can be easily adapted with any vegetables you have in the fridge! It is a vegetarian recipe.
Instructions
- Cook the pasta
- In a large pot heat olive oil on med
- Add onion and garlic, cook 5 minutes
- Add broccoli and carrots, cook 5-7 minutes
- Add zucchini, cook 5 minutes
- Add mushrooms
- Cook 3-5 minutes add wine, basil, parsley, and oregano
- Cook a few minutes and toss with pasta
- Top with cheese and serve
