Pasta Primavera

Pasta Primavera Dish

  • 3 carrots, sliced
  • 1/3 cup white wine
  • 1 tsp basil
  • 1 tsp parsley
  • 1 tsp oregano
  • 3/4 cup Parmesan cheese (Substitute: Veggie Cheese)

Ingredients

  • 1 box garden spirals pasta
  • 1/4 cup olive oil
  • 1 medium onion chopped
  • 1 small pack of mushrooms
  • 2 cloves garlic or garlic powder
  • broccoli chopped, 2 small heads
  • 1 zucchini, sliced and quartered


This is a very simple recipe that can be easily adapted with any vegetables you have in the fridge! It is a vegetarian recipe.


Instructions

  1. Cook the pasta
  2. In a large pot heat olive oil on med
  3. Add onion and garlic, cook 5 minutes
  4. Add broccoli and carrots, cook 5-7 minutes
  5. Add zucchini, cook 5 minutes
  6. Add mushrooms
  7. Cook 3-5 minutes add wine, basil, parsley, and oregano
  8. Cook a few minutes and toss with pasta
  9. Top with cheese and serve
