Maintaining Celery

There are a lot of things to know about keeping celery. Celery is good for several weeks past the initial date when kept in the fridge, and is easy to notice when it starts to expire. It's however best nutritionally to be eaten within the first week of opening/purchase. Pay specific attention to the color, as you ideally want a nice light green color. When the stalks begin to lose their color and become more fully white, they're going bad. There's a specific texture change too, as the crisp stalks will begin to turn limp.
