Summer Vegetable Casserole

This is a healthy veggie side dish that is very naturally flavorful and light to eat. For this recipe you may want to invest in a slicer.

Ingredients
- 1 large onion, sliced and quartered
- 2 large tomatoes, sliced
- 1 large Yellow Summer squash, sliced
- 1 large Zucchini, sliced
- 2 cloves garlic or garlic powder
- salt
- pepper
- olive oil
- ¾ cup parmesan cheese (I substitute veggie cheese)
Directions:
- Preheat the oven to 350 degrees.
- Lay down a flat layer of Zucchini
- Add another flat layer with the onions and garlic
- Lay down yellow summer squash
- Lay down tomatoes and top with olive oil
- Sprinkle with salt and pepper
- Bake 1 hour
- When vegetables are cooked, add parmesan cheese (or veggie cheese!) and bake 4-5 more minutes to melt cheese over dish
- Cut and serve in squares
