Vegetable Casserole Dish

Summer Vegetable Casserole

This is a healthy veggie side dish that is very naturally flavorful and light to eat. For this recipe you may want to invest in a slicer.

Ingredients

  • 1 large onion, sliced and quartered
  • 2 large tomatoes, sliced
  • 1 large Yellow Summer squash, sliced
  • 1 large Zucchini, sliced
  • 2 cloves garlic or garlic powder
  • salt
  • pepper
  • olive oil
  • ¾ cup parmesan cheese (I substitute veggie cheese)

Directions:

  1. Preheat the oven to 350 degrees.
  2. Lay down a flat layer of Zucchini
  3. Add another flat layer with the onions and garlic
  4. Lay down yellow summer squash
  5. Lay down tomatoes and top with olive oil
  6. Sprinkle with salt and pepper
  7. Bake 1 hour
  8. When vegetables are cooked, add parmesan cheese (or veggie cheese!) and bake 4-5 more minutes to melt cheese over dish
  9. Cut and serve in squares
