Crustless Spinach Quiche

I love quiche, but I usually only eat it on Easter in all its bacon-loaded glory. This recipe is healthy enough to eat year-round for breakfast, brunch, or whenever you feel like it.

Ingredients
- 1 tb. vegetable oil
- 1 chopped onion
- 10 oz. frozen spinach (thawed and drained)
- 5 beaten eggs
- 3 cups shredded cheese (Muenster, cheddar, whatever you like)
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions
- Preheat oven to 350
- Grease a 9-inch pie pan
- Heat oil in a large pan over medium/high heat
- Add onions and cook, stirring occasionally, until onions are soft
- Stir in spinach and cook until it isn't soggy anymore
- In a large bowl, combine eggs, cheese, salt, and pepper
- Add spinach mixture and blend
- Put mixture into pie pan
- Bake until eggs have set (about 30 minutes)
- Let cool before serving
