Crustless Spinach Quiche

I love quiche, but I usually only eat it on Easter in all its bacon-loaded glory. This recipe is healthy enough to eat year-round for breakfast, brunch, or whenever you feel like it.

Ingredients

  • 1 tb. vegetable oil
  • 1 chopped onion
  • 10 oz. frozen spinach (thawed and drained)
  • 5 beaten eggs
  • 3 cups shredded cheese (Muenster, cheddar, whatever you like)
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Directions

  1. Preheat oven to 350
  2. Grease a 9-inch pie pan
  3. Heat oil in a large pan over medium/high heat
  4. Add onions and cook, stirring occasionally, until onions are soft
  5. Stir in spinach and cook until it isn't soggy anymore
  6. In a large bowl, combine eggs, cheese, salt, and pepper
  7. Add spinach mixture and blend
  8. Put mixture into pie pan
  9. Bake until eggs have set (about 30 minutes)
  10. Let cool before serving
