Bell Pepper Quesadillas

This recipe is a great way to elevate a simple and easy to make dish in just a few steps. The bell peppers add color and flavor to a childhood favorite.

  1. Lay tortillas on a work surface.
  2. Spread peppers, onions, and cheese on half of each tortilla, dividing evenly.
  3. Fold the tortillas in half, pressing gently to flatten.
  4. Heat a large griddle or skillet over medium heat.
  5. Cook the quesadillas until crispy on the outside and the cheese is melted, 2 to 4 minutes per side.
  6. Let the quesadillas cool for 1 minute before cutting into wedges to serve. Serve with guacamole and salsa.
