Salsa Verde

Ingredients

  • 1-2 pounds tomatillos
  • 2 jalapeño peppers (sliced in half and seeded)
  • 1 small onion (sliced into wedges)
  • 4 cloves garlic
  • 1 lime (juice and zest)
  • 1/2 cup cilantro
  • salt and pepper to taste


Salsa verde is made from tomatillos. It makes an excellent salsa or base for chili. Try using this recipe in combination with the Quinoa White Chicken Chili.


Instructions

  1. Place the tomatillos, jalapeños and onion in a single layer on a baking sheet or dish.
  2. Cook in oven at 400° until tender. About 15-20 minutes.
  3. When they are cool enough, remove the out husks from the tomatillos.
  4. Put tomatillos, jalapeños, onion, garlic, lime juice and cilantro into a food processor or blender and puree.
  5. Add salt and pepper to taste.
